Email Setting on New Computer

I'm running a Win10 machine with my email client (em Client) set as the default email client. However, when I want to send images via email from PM it wants to use Outlook (which is installed on my machine but I don't use and haven't configured). I know PM uses MAPI and em Client does support MAPI. I just don't know how to tell PM to use it instead of Outlook.

You'll have to fire up Outlook and make it no longer be your MAPI client and then in "em Client" set it to be your MAPI client.  PM just talks to the OS to get the current default MAPI client and then talks to that client.
