It's a little late to post this, but the iPhones can be configured to save in HEIC format, or JPG format.
Pick whichever you prefer.

It appears to be 8-9 months since the last update on adding support for HEIC files to Photomechanic 6. Can we please get an update on its status.
This format is now being added to new full frame digital cameras designed for professional use (1DX III and R5/R6 from Canon) and would like to take advantage of it.
It would be great if the files could be renamed in the application to help with their organization.

Support for HEIC images was added starting with Build 4150 back in December 2019: http://forums.camerabits.com/index.php?topic=13046.msg64128

There have been multiple improvements to the functionality of HEIC since then.

Please update your installed version of Photo Mechanic 6.  Like Kevin says, HEIC files have been supported for many months now.
