Is it possible to get an ingest to occur into a dated folder with the date style of: 2007-04-08 or 08-04-2007 in other words...put some hyphens in?

Sure.  Just use the "into folder with name" option in the "Copy Photos:" popup menu.  Then in the "Folder Name:" field enter:

{year4}-{month0}-{day0}
or
{day0}-{month0}-{year4}

though I recommend the former instead of the latter since it will sort better in the Finder/Windows Explorer.
