Hello,
I can know the IPTC encoding in an old digital image? I have some strange characters in old images JPG, and I would like to know in what Encoding was written to try to fix it. With the actual XMP, no problem.

Unless the encoding field is specified in the IPTC record (most do not specify and usually when they do specify it is UTF-8) it is impossible to tell what encoding was used.  You can experiment by changing the read encoding in the IPTC/XMP tab of the Preferences dialog and see which one is the correct one.  It is just trial and error.
