I have 3 regular clients that require photos sized differently to each other, it would be nice to have some sort of profile drop down in the save as dialog box to make simpler. when you setup your profiles, you could have profiles for different clients that would hold different settings e.g.  scaling, sharping, compression etc.

That's what those buttons with the 'lightning bolts' on them are for.  Virtually every complex dialog has one.  You can use them to take a snapshot of all of the settings and restore them with one or two clicks later.
