Best practices sort of question...

So I've had PM Plus for about a year now and I'm finally getting around to trying to use it regularly and to feel confident with how I'm using it, what it's capable of, etc.. I will start by saying that I am NOT a professional photographer of any sorts but just trying to use PM+ to organize my collection of photos.

With that said, I've got under 10k photos and some are in various subdirectories on my Mac.  Since I'm using PM+ I'm curious about how best to make use of catalogs.  I've got the general concept behind collections but not sure if I'm doing the best with using catalogs.

What I'm doing at the moment is putting ALL my photos into a catalog called "Unsorted Imports" and then will go through the process of adding the necessary metadata to each and have been watching various videos on that topic.

But with catalogs, I'm not sure what the best methodology is .. Maybe in the big picture it just doesn't matter that much? 

I know I've got random pics in some cases (thing I might take with my cell phone) but I guess I was thinking that I could ultimately have a handful of catalogs and move "processed" images from the unsorted catalog to one of the others (with the idea of ultimately making the "unsorted" catalog empty once I'm completely done with metadata and figuring out what catalog each belongs to..  but do not see a way to do that at least outright.  Yeah, I guess I could add them to the 2nd catalog and then remove from the "unsorted" one.. I'm likely missing the mark on this.. Any suggestions/guidance would be GREATLY appreciated!
