Hi does anyone know if there is a way to do this, I'm having to type in the folder each time.  And the names are not exactly memorable.

You can set the destination folder in the Connection Settings dialog (either from Preferences or if you Click Connection Settings from the FTP dialog). Once you enter it and press OK it is saved and used as a root of your uploads.
But it may be better to set up this path only as a root and to upload each assignment in an assignment related folder that can be specified in the upload dialog and is created within the destination folder you set in the Conection Settings.

And you can save a snapshot including your destination path using the Snapshot button (with the Lightning bolt in the bottom left corner). Later you click it and you can select the saved snapshot from the menu.

Allways shooting RAW.
