Deleting "Open With" Editors

I have a list of 4 "Open With" Editors. I want to change one to a newer version. How do I delete the old version from the list? Or phrased another way - How do I delete any of the editors from the list. I looked in preferences and it seems that all I can do is add additional editors. TIA

If you select the editor you want to change and click on the "Choose" button and select the new editor you will automatically replace the old editor with the new.

Where is the list of editors? When I am in Preferences, Launching only one of the 4 programs I use is listed. When I right click all 4 show up. I either want to delete one of them or change one of them. I can't seem to figure out how to do that.

See the 'Set...' button to the right of the text that says "Assign specific editors for each file".  That's where you assign your editors.  Click on the 'Set...' button and make your changes.
