IPTC Template: How to de-select all fields at once?

I am looking for a keyboard shortcut that allows me to deselect all the fields in the IPTC-template at once.

When one applies metadata to the pictures you have to make sure that the small boxes in front of the field are checked. If unchecked it won't update the metadata.

I've got 20 fields in the IPTC Template and most of the time I select 15 of them and upload it to a batch of pictures. If I want to change one of the fields afterwards I have to deselect all 15 boxes by hand. If I forget to uncheck one of the boxes then the metadata is overwritten again.
It's a tedious process to click every single box. I am looking for a keyboard shortcut that deselects all these boxes at once; Does that exist?

Also, what's the function of the "hand" when the mouse hovers over the IPTC template?

No keyboard shortcut, but the Clear button can be configured to clear what you want.  Hold down the "Modifier Key" (Option on macOS, Shift on Windows) and click on the button and you'll get to choose what is cleared.

Also, what's the function of the "hand" when the mouse hovers over the IPTC template?

It indicates that if you were to click and drag with your mouse, the pane would scroll.
