Have looked seemingly everywhere for info regarding how to add a watermark to pictures with Photo Mechanic. Any suggestions out there?

You can do watermarking in the following dialogs:
Save As
FTP As
Upload To PhotoShelter
Send Photos via email
HTML Export

Watermarking appeared in version 4.4.3 of Photo Mechanic.
Version 4.4.3.3 is the current version.
