Cant rename folders created in the favorites window, My tree is: Month, week, day, Event.

Would be nice to be able to resize the IPTC pad like you could in 4.6.9

Can not Copy and Paste using the Command C and Command V from the Headline to the caption in the IPTC Field

Top level Folders (the Favorite itself) can't be renamed.  The subfolders can be renamed.

You're using the Classic IPTC dialogs.  Go into the Accessibility section of the Preferences dialog and turn off the 'Use Classic IPTC dialogs' checkbox.  Below that checkbox are two buttons that let you customize the layouts of the newer resizable IPTC dialogs.

I just tested it and Copy and Paste works fine for me in the resizable IPTC dialogs.
