Hello I am new to this wonderful program but I can't seem to find out what The Gamma button does, If some one could explain it that would be great.

What Gamma button?  I think you mean the Color Management button in the toolbar?  It toggles Color Management on and off.  When the button is colorful then Color Management is on.  When it is de-saturated, Color Management is off.

You'll get a 20-25% speed boost when it is off.  Otherwise leave it on.
