I would like to be able to pick from one of my several email accounts to send photographs from instead of always using my default email account.

Photo Mechanic has no way to get that information from your email client.  So that feature cannot be implemented.

If you're using a Mac, check the "Review email in email application before sending" box - it's near the bottom of the dialog box - I use OS-X Mail and I can pick any one of my email accounts to send a message from when in Mail. Just make sure the accounts are setup in Mail first.
