Color Management function...very confused

Hello. I am having a hard time understanding the Color Management function in in Photo Mechanic. When viewing Jpegs, we have sRGB IEC61966-2.1 embedded in the file. Under Color Management in Preferences, we have "default ICC profile if undetermined" set to sRGB IEC61966-2.1 as well. When I view these Jpegs in Photo Mechanic, what exactly am I seeing when I toggle on/off the Color Management.

I am just trying to get an accurate view on what my finished jpeg looks like and not fully understanding which toggle mode I need to have Color Management set at.

Given that your monitor has a calibrated ICC profile assigned to it, when color management is on, the colors in your image are matched from the embedded profile to your display's profile using the relative colorimetric intent.  When color management is turned off, no attempt is made to match colors from the image's profile to your display.

Would you advise to leave that management turned off ? (it's unchecked as for now)
I use a 2017 calibrated 5K iMac and I shoot Nikon RAW + JPG files (set to sRGB in camera).

No, I would not advise keeping color management turned off.
