I use AtomicView to class my pictures. I allway put keywords with PM.
My choice in PM is :   copy  EXIF date to IPTC date.

All is fine between PM and AV but formats.
EXIF date read as 06.02.2010
IPTC date read as 20100602  not pleasant ! I wish separators of any sort.

I asked AV about that, they say "PM has saved in this format ".

That's the date format specification for IPTC.  Four digit year, two digit month, two digit day.  All IPTC-writing applications should do it this way.

They should be able to parse the date out of the IPTC record and display it however they like.

Platti is trying to tell you that you can use Photo Mechanic variables in some IPTC field of your choosing to put the IPTC date in whatever format you like.  So for instance if you're not using the 'Edit Status' field, you could enter:

{day0}.{month0}.{year2}

into the IPTC Stationery Pad's Edit Status field and then apply the IPTC Stationery Pad to all of your photos.  Then when you use AV, you'll see the IPTC date in the Edit Status (or whatever they call that field in AV) in your chosen format.
